Fireside Chili

2 lbs chili meat (I used coarse ground hamburger)
1 lb ground beef
2 TBS. bacon drippings
1 pint hot water
1 can (10-1/2 oz) tomato puree
1 can (10-1/2 oz.) diced tomatoes with juice
1 tsp Tabasco
1 chili pepper pod or to taste
2 lrg onion, finely chopped
2 cloves garlic, finely chipped
3 heaping TBS chili powder
1 TBS oregano
1 TBS cumin
1 tsp. paprika
1 tsp ground mustard
¼ tsp cayenne pepper
1 tsp salt
 
Brown meats, add bacon drippings and cook 5 minutes. Add hot water, tomato puree, tomatoes, Tabasco, pepper, onion and garlic; simmer 30 minutes. Add rest of the ingredients and simmer slowly for 1 to 2 hrs. Serve with crackers, raw onion, grated sharp cheddar cheese and plenty of cold Texas beer. Serve 6 to 8.
