Tortilla Soup

2 cans cream of chicken soup
2 lbs. chicken (cooked & diced) or 2 cans of chicken
4 cups water
3 tsp. chicken boullion granules (or 3 cubes)
1 tsp. Beef boullion granules (or 1 cube)
1 can rotel tomatoes w/chilis
1 sm. can chopped green chilis, drained
1 can corn, drained
1/2 tsp. onion flakes
1/2 tsp. chili powder
1/2 tsp. cumin
1/4 tsp *McCormicks Hot Shot
1/4 tsp. *McCormicks Mexican Seasoning
1 lb. Velveeta cheese, cubed
Juice of 1 lime
cilantro, if you like

Dump everything in crockpot or soup pan & cook until everything is hot & blended. To serve, put tortilla chips in bottom of soup bowl, pour hot soup over top, sprinkle with shredded monterrey jack cheese. YUM!
*Found in spice section. Sometimes it is hard to find & it doesn't hurt to leave it out.
